What is HACCP?

The word HACCP stands for Hazard Analysis & Critical Control Point, and put simply, refers to processes and procedures that must be put in place to ensure that any food that is produced is safe.

In Ireland, since 1998 it has been a legal requirement for all food businesses to have a food safety management system based on the principles of HACCP.

Within a food safety management system, Critical Control Points (CCP) and critical limits should be identified and these should include the temperature measurement of food during processing & distribution to the consumer.
